Did apple smoked ribs yesterday. With oven fries and barbecued beans.

So my pork butt came out just OK. It was cooling well for the first like hour, until a squall came through and it was difficult to keep the grill hot.

It’s still good flavor and not too dry, but it’s not tender enough to pull apart. I’m thinking about chopping it up and putting it into a chili or something?

Grilled Filet Mignon for the first time in a long time last night. Always kind of forget how rare that meat always looks. Cooked medium rare, looked rare, but so damn delicious. Wife who can't stand anything looking too rare really liked it too.

Mrs 99 requires all steaks to be cooked extra, super, dooper well done. Kills me to cook her a filet, but she always loves it.

My grill hasn't gotten any use since getting an immersion circulator (sous vide) a few months ago. Old frozen steaks I got on markdown four months ago and don't bother defrosting turn out spectacular.

So... What do you do when you take the cover off your smoker that you haven't used since fall and find that it's completely full of mold because you must have forgotten to dump the water out and probably didn't put the cover back on before it rained?

Heat that smoker up hot ( sorry gotta waste some charcoal on this one ) and burn that shit off.
Then spray it with a hose and scrub it down.
