I tend to do that in the spring to prep for smoke season ( which is 'round 8 months ).

Good question...i usually like pork best (st louis style if a good bbq spot), but have also had good beef (although i don't have the guts/skills to do those myself).

I feel like beef is always more tricky than pork for me to smoke. Hard to fuck up a pork butt, but i feel like beef brisket is more tricky....and it's an expensive fuck up if you ruin a brisket LOL

Brisket you can ruin, the flat has a cap but not much marbling. Ribs have enough fat throughout to be less susceptible to drying out

What in the hell are beef ribs?

I think there is a restaurant up the street that might sell those with a side of their sausage burnt ends.
