Amen 99, they're great for braising.
The Korean style can be good if you sous vide then sear them, but I think smoked and braised are both amazing.

A new BBQ joint opened in my hood.
You can get brisket and pulled pork as a sandwich but also as tacos or on top of eggs for brunch.

Tacos are simply a platform. It's what is inside that counts. And if that's bbq, that's great.

With the exception of the institution places, even in KC you need BBQ tacos and nachos on the menu to be successful.
Personally I hate paying for what I see is an unneeded "platform" and think they detract from what should be the star. In rarer cases, it's to hide the bad BBQ.
If we're ordering nachos, though, might as well be burnt ends on top rather than packaged shredded chicken.

A sign that shows the spot is more about BBQ is if it offers it by the pound.
This place does - so i'll go for just the combo meat deal for the first time.
But I can get down on pulled pork or brisket soft shell tacos.

can't tell whether the $6 nachos are detracting from the star, or just hiding bad bbq.
fuck it, who cares, the nachos are good, especially by the pound.
