More brisket. This one was ridiculously good. 5/5

Chicken was a tad dry and not much flavor but still pretty good for a breast. 3/5

Cucumber salad was really good, in this vinegar and dill. Why not, 5/5

Had to get fries too cuz hungover. Good and hot and crispy. Had some sorta spice on it, which I liked, but otherwise prefer fries with nothing but salt, as some more neutral starch to counter all the other spicy stuff. 3.5/5

Sauce was ok. Lotta molasses again. 2.5/5

Ambiance was a little hip and trendy feeling for a bbq joint. Pretty pricey too. 3/5.

Overall 4.5/5. Really really good.

Tomorrow, meeting up with my 8th grade girlfriend and prob getting Joes.

how do those ratings =4.5*?

17/25 = 0.68

should be more like an overall of 3.4* unless the brisket rating is heavily skewed towards the brisket only.

17/25 = 0.68

should be more like an overall of 3.4* unless the brisket rating is heavily skewed towards the brisket only.

I guess I didn’t think of the overall experience score as the average of all the other scores

For instance, when I decided the sauce was just ok, I simply didn’t eat much more of it, so it didn’t get as much weight toward the score as the brisket, which was promptly devoured

fair, but sauce is an important part of a BBQ experience.

moreso than cucumber salad, for instance.


rate how ya want...it's not my rating system. Just a thought.

Yeah cucumber salad is a less usual bbq side but it was good.

Turkey and Chicken are probably the last 2 things (meat wise) I would get at a good KC bbq spot.

Burnt ends, brisket, ribs, pulled pork.

If I were going to do chicken, i'd want it in pulled form, not a breast.

And ous does know that much of KC BBQ IS molasses based, right?

BBQ around IL mostly sucks so I eat like a fat boy when in KC. 3 meat combos...Ribs and Brisket every time (although, could be rib tips and burnt ends, but you get it), and then either sausage or pulled pork as the 3rd depending on the place and my mood. Sides vary because, well, they vary. I guess my preference would be beans, mac, and greens...but i could throw slaw in the mix too.

KC molasses and tomato based, sweeter typically

Texas Molasses and tomato based with more pepper and spicy kick

Carolina mountain BBQ piedmont sauce, vinegar based cut with sugar and spicy

Carolina coastal and southern mustard based

Memphis tomato based but cut with vinegar, blend of KC and Carolina

st Louis molasses and tomato based but tangier than KC

I've also seen a sort of butter cream and molasses with vinegar based sauce called bbq sauce in the northern mideast and Alabama has some sort of white sauce they call bbq sauce.


if I was rating I'd probably go

1. Texas

2. Piedmont Appalachia Carolina sauce

3. Memphis
4. KC/St. Louis


5. everything else.

I prefer carolina style on smoked sausage.


No clue why.


Edit: good BBQ doesn't "need" sauce, but if I am putting some on, that's my method.

Caveat: as a naturalized Olathean, I am a giant giant hoor for this shit. I can’t help it! There have been parts of my life I’d eat Joe’s like 2-3 times a week. That’s to say, I’m pretty much sentimental about this joint. I also think it’s maybe the most consistent of the bbq joints too. And, heck, I had to fight the deeply-ingrained Olathean urge to order a certain sammich with cheese on it. So yeah, hopefully this review isn’t too biased.

With all that said…

Wanted to get turkey and chicken, but they said those are the classic kc bbq meats and were so popular they’d already sold out. Went for burnt ends and Carolina pork sammich instead. Everything was all just insanely good.

Burnt ends 5/5
Roiboi pork sammich 5/5
Dirty rice 5/5
Tater salad 5/5
Fries 5/5
Night of the living 5/5
Bubba’s hot vinegar 5/5

Overall 35/5. I’ve eaten at this particular location prob hundreds of times, never had a bad meal, and today was once again so on point.

My 8th grade girlfriend loved it too…don’t worry it’s cool her parents signed a permission slip. Besides, they say she’s already reading at a sophomore level.

Tomorrow supposed to meet some other friends who apparently live right by a Jack Stack so they’re pushing for that. Might just keep it easy and go for it but might play the birthday card instead and insist on some Gates.

for sure, Texas style on beef and ribs, Carolina on pork and poultry is my usual way.

I'm not s huge sauce guy but I like it available. I usually don't sauce my BBQ, but I will dunk and dip n sauce sporadically when I want a change of pace.
